The same Arabica cherries, roasted two ways. Order whole bean for grind-on-demand freshness, or pre-ground for filter, espresso or french press.

Speciality grade isn't magic — it's data. We instrument every plot and let biology, not chemistry, do the heavy lifting.
Weekly multispectral overflights track shade density and crop health, plot by plot.
Soil-moisture probes at three depths feed a model that only waters when the plant asks.
12 on-estate stations log temperature, rainfall and humidity at five-minute intervals.
Native compost, bio-fungicides and intercropped legumes replace synthetic fertilizer.
Vision models grade cherries at the sorting belt so only peak-ripe fruit moves forward.
Every bag carries a lot ID linked to its harvest day, plot, processor and roast date.

Only ripe red cherries, picked over multiple rounds, never machine-stripped.
02 · pulp
Cherry skin removed within hours of harvest to protect the bean.
03 · ferment
36-72 hour fermentation in tile tanks develops origin character.
04 · dry
Slow sun-drying on raised African beds for 12-18 days, hand-raked daily.
05 · rest
Beans rest in parchment for 30+ days to stabilize moisture and acidity.
06 · roast
Small-batch roasted on a Loring smart roaster, profile-locked per origin.

No blends from anonymous lots. Every bag is traceable to a specific plot, picked in a specific week, processed in a specific tank. That’s the unfair advantage of growing what we sell.
what is speciality coffee
Speciality coffee is graded by the Specialty Coffee Association on a 100-point scale. Anything above 80 qualifies. Our latest cup scored 86.5 — from Chikmagalur, not Colombia.
what is natural farming
No synthetic fertilizer. No pesticides. We use cover crops, compost, bio-fungicides and shade trees. The soil microbiome does the work it’s done for ten thousand years.
